Gluten orientation. When flour is initially
mixedwithwater,thegluteninmoleculesform
arandomnetworkofglutenchains.Kneading
helps orient the gluten chains in orderly
arrays.

orientthelongchainsandencouragethesideby-side bonding that contributes to gluten
strength.

maximumstiffness.

minimumofkneading.Thisgenerallyresults
infewerandlargeraircells,andsoacoarse,


irregulartexturethathasitsownappeal.The
