Nghidn ciiu thanh phan dinh duong cua rong bun (Enteromorpha intestinalis) duoc thuc hien tir thang
3/2011 ddn thang 2/2012 a cac ao quang canh va thuy vuc tu nhien cua tinh Bac Deu va Soc Trang. Ket qua
cho thay thanh phan sinh hoa cua rong bun thay ddi theo giai doan phat trien, trong do thanh phan dinh
duong cua rong non va rong tnrong thanh tuong tu nhau va ca hai co ham luang dinh duong cao hon nhidu
so vai rong gia. Them vao do, thanh phan sinh hoa ca ban va axit amin cua rong bun cung duoc xac dinh a
cac khoang do man khac nhau (thap nhat, trung binh va cao nhat) cho m6i thuy vuc. 6 Soc Trang, mlu
rong bun duoc thu a 3 khoang do man gom 1-2 ppt, 5-6 ppt va 10-12 ppt; ket qua cho thay ti le tuoi/kho cua
rong bun giam theo su tang do man, nguoc lai ham luong lipit va tro tang theo do man, cac thanh phan khac
(protein, xa va hydratcacbon) it thay doi. Ham luang tong axit amin cua rong thu a do man 1-2 ppt va 5-6
ppt tuong tu nhau va co gia tri cao hon mlu rong thu a do man 10-12 ppt Doi vai miu rong bun thu a Bac
Deu vai bon khoang do man: 10-12 ppt, 15-17 ppt, 20-22 ppt va 25-27 ppt, ket qua phan tich bieu thi ti le
tuoi/kho, ham luong lipit va tro co cung khuynh huong vai miu rong thu a Soc Trang. Tuy nhien, ham
luang protein thay doi khac nhau, gia tri thap nhat va cao nhat duoc tim thay a do man 15-17 ppt va 25-27
ppt, nhung a khoang do man 10-12 ppt va 20-22 ppt, rong bun co ham luang protein gan nhu nhau, ham
luang hydratcacbon giam theo su tang do man. Ham luong tong axit amin bieu thj anh huong giong nhu
protein. Ngoai ra, ham luong protein cua rong bun co moi tuong quan thuan voi ham luang dinh duang
trong thuy vuc.

2. PHUONG PHAP NGHKN CUU
(Enteromorpha spp.) xuat hien tu nhien voi sinh

phoi kho trong bong ram 34 ngay. Rong kho duoc
bao quan d nhiet do -15°C de giri phan tich thanh
phan dinh duong. Phuong phap nhan biet hinh thai
cac giai doan phat trien cua rong bun theo nghien
cuu cua Kirby (2001).
2.3. Cac chi tifeu pM n tich
- Thanh phan sinh hoa co ban gom dam tho, lipit
tho, tro, xo va hydratcacbon duoc phan tich theo
phuong phap AOAC (1995).
- Thanh phan axit amin gom cac axit amin thiet
yeu va khong thiet yeu, duoc phan tich theo phuong

phap EZ: faast Amino Acid Analysis of protein
Hydrolysates by LCMS.
- Thanh phan axit beo: axit beo bao hoa va cac
axit beo thiet yeu mach cao khong bao hoa, duoc
phan tich bang phuong phap sac ky khi cua Coutteau
va Sorgeloos (1995).

2.4. TMnh phin anh hoa cua rang bun ( £

rong bun dupe trai thanh ldp mong va phoi trong
bong ram 3 4 ngay den khi khoi lupng khong doi.
2.5. X ulysdlifeu
Cac so lieu dupe tinh toan gia tri trung binh va
do lech chuan bang phan mem Excel. Phan tich
thong ke bang phuong phap AN OVA voi phep thu
TUKEY d muc y nghia p<0,05, su dung phan mem
SPSS 14.0.
3. KET QUA VA THAO LIMN

Sau khi so sanh ket qua phan tich, giai doan

va hydratcacbon cho ca 2 m iu rong bun a Bac Lieu
va Soc Trang. Tuy nhien, m iu rong bun thu d Soc
Trang bilu thi ham lupng dam va lipit cua rong gia
giam nhiiu hon so voi m iu rong gia thu a Bac Lieu.
Ngupc lai, ham lupng tro va xo tang theo su phat
triln cua rong bun. Doi vdi ham lupng tro, giua 3 giai

doan khac biet co y nghia thong ke (P<0,05). Mau
rong bun d Bac Lieu, ham lupng x a cua rong non
thap hon co y nghia so voi rong trudng thanh va rong
gia, trong khi do m iu rong bun d Soc Trang thi ham
lupng x a cua rong trudng thanh va rong gia khac
nhau khong co y nghia thong ke (P>0,05) nhung cao
hon co y nghia so voi rong non (Bang 2).

Tom lai, thanh phan sinh hoa co ban cua rong
bun d 3 giai doan cho thay hydratcacbon chiim ti le
cao nhat (37,64-52,29%), ke d in la tro (28,0847,53%),
dam (7,93-16,83%), xo (2,69-6,19%) va chiim ti le thap
nhat la lipid (0,71-2,90%). Ham lupng cac thanh phan
sinh hoa cua rong non va rong trudng thanh tuong tu
nhau va ca hai cao hon co y nghia so voi rong gia.

Nhin chung, XMUFA, IPUFA, Xn-3 PUFA va Xn*
6 PUFA cua rong bun d ca hai thuy vuc co khuynh
huong tang tu rong non den rong trudng thanh va
giam thap d rong gia. Tuy vay, ket qua thdng ke bieu
thi Mu het cac trudng hpp thi su khac biet giua rong
non va rong trudng thanh khong co y nghia thdng ke
(P>0,05), ca hai giai doan nay co ham lupng cao hon
co y nghia so voi rong gia (P<0,05). Rieng XPUFA cua
m iu rong bun d ca 2 thuy vuc bieu thi sir khac biet
thdng ke giua 3 giai doan (P<0,05). Them vao do, ket
qua bieu thi ham lupng axit beo cua cac m iu rong bun
d 3 giai doan co ham lupng axit palmitic (16:0) rat cao
dao dong tu 33,60 den 41,35% va chiem nhieu nhat (7881%) trong tong ham lupng axit beo bao hoa (XSFA),
do do £SFA cao nhat trong tong cac thanh phan axit

beo cua rong bun; ham lupng LN kha cao (4,25-8,53%).
Ngoai ra, m iu rong bun d Soc Trang cd ham lupng
EPA va DHA cao hon so vdi m iu rong bun d Bac
Lieu. Ham lupng Xn-3 PUFA cao hon tir 3 den 5 lin
so vdi Xn-6 PUFA dupe tim thay d ca hai m iu rong d
Bac Lieu va Soc Trang.

3.2.3. Thanh phan axit amin

Theo Le Anh Tuan (2004), rong b iln d giai doan

(0,53-2,30%) chiem ti le cao nhat, kd den la alanin Manivannan et al. (2009), su thay ddi ro ret ve thanh
(0,61-1,63%) va thap nhat la cystin (0,04-0,14%). Khi phan sinh hoa cua rong b iln theo mua vu, cac y lu td
so sanh thdng ke ve thanh phan axit amin cua 3 giai moi trudng cung nhu cac giai doan phat tn ln cua
doan rong, ket qua cho thay ham lupng cua timg loai rong biln va chu ky hinh thanh bao tir. va thanh
axit amin, XEAA XNon-EAA va XAA cua rong non phin sinh hoa cua rong b iln thay ddi trong cung mot
va rong trudng thanh tuong tu nhau (P>0,05) dupe loai va giua cac loai.

K it qua nghien cuu cua Benjama and Masniyom
(2011) cho thay rong bun Ulva pertusa thu hoach vao
mua mua cd ham luong cac chat dinh duong cao hon
cd y nghia thdng ke so voi m iu thu vao mua he nhu
protein, lipid, tro, cac nguyen td (K Na, Cu va Zn), va
mot sd axit amin (glutamic axit, acginin, threonin va
alanin). Them vao dd, ham luong dinh dudng cua
rong biln bi anh bdi ham luong cac chat dinh dudng
trong mdi trudng sdng cua chung. Ham luong
protein trong rong biln cr thuy vuc nhiet ddi va a

Baneijee et al. (2009) danh gia thanh phan sinh
hoa cua ba loai rong biln (E. intestinalis, Ulva
lactuca va Catenella repent) d vinh Bengal, An Do tir
thang 9/2007 d in thang 6/2008. Tac gia k it luan
rin g thanh phin sinh hoa cua rong b iln bi anh
hudng ldn bdi mdi trudng nude (do man, nhiet do va
ham luang nitrat) d khu vuc khao sat. Cu th i, ham
luong protein cua ba loai rong b iln khao sat tuong

Ham luong hydratcacbon cao nhat duoc tim thay d
tram thu m iu cd do man cao va tuong quan thuan vdi
nhiet do nude. Dac biet, nhiet do ddng vai trd quan
trong ddi vdi su bien dong ham lupng lipit cua rong
biln, khi nhiet do cao thi ham lupng lipit cua rong

Theo Qing etal. (2006), rong bun Enteromorpha
linza chira 18 loai axit amin, protein va khoang chat,
cao horn cac loai rong khac (Laminaria japonica,
Porphyra haitanensis, Hizikia fusiformis va Undaria
pinnatifida). Cac axit amin thiet yeu chiem khoang
53% tong axit amin cua rong E. linza. Horn nua, rong
bun rat giau cac axit beo thiet yeu khong no nhu LN,
ARA va EPA (Aguilera-Morales et al., 2005).
Shanmugam and Palpandi (2008), bao cao rang rong
Ulva reticulata thu tir Vellar cira song cua An Do, cho
thay rin g rong Ulva co ham luong lipit, dam,
hydratcacbon, nude va cac axit beo tuong ung la 50,
25, 8, 48, 19, 98 va 1,7% khoi luong kho voi cac loai
axit beo dien hinh nhu axit palmitic, axit oleic, axit
linoleic.
Ngoai ra, trong thoi gian thu m iu d cac thuy vuc
giau dinh duong (ham luong NH 4/N H 3: 3-10 mg/L,
N 0 3: 10- 50 m g/L va P 0 4: 2-5 mg/L) nhu ao tom
tham canh bo trong, kenh/ao nude thai tir he thong
nuoi tom, nude thai sinh hoat, ao bon phan cua he
thong nuoi Artemia, cic m iu rong bun nay co ham
luong protein (20-28%) cao hon so voi cac thuy vuc tu
nhien va ao quang canh (protein: 10-17%). Phuong
trinh tuong quan bieu thi ham luong protein cua
rong bun co tuong quan thuan vdi ham luong N 0 3
trong moi trudng song cua chung (Y =0,245+10,994;
R2 = 0,784). Ket qua nghien ciru nay phii hop vdi
nghien cuu truoc. Lartigue and Sherman (2006) nhan
thay rong bun (E. lingulata) co kha nang chuyen hoa

N 0 3 nhanh hon trong thuy vuc co N 0 3 cao. D ilu nay
co the lam tang su tich luy protein trong mo cua loai
rong niy. Cac loai rong luc Ulva spp. song trong moi
trudng giau dinh dudng thi co ham luong protein
tang tir 11% den 32% (Benjama and Masniyom, 2011).

INVESTIGATING NUTRITIONAL COMPOSITIONS OF GUT WEED (ENTEROMORPHA
INTESTINALIS) IN BRACKISH WATER BODIES FROM BAC UEU AND SOC TRANG PROVINCES

Summary
Study on nutritional composition of gut weed (Enteromorpha intestinalis) was conducted from March 2011
to February 2012 at the extensive farms and the abandoned ponds from Bac Lieu and Soc Trang provinces.
Results showed that the nutritional values of gut weed had variations in different developmental stages, in
which the nutritional values of young stage were comparable to or better than the adult one and both were
superior to those of the senescent stage. Furthermore, the proximate composition and amino acid profiles
of gut weeds were also determined at different salinity ranges (the lowest, intermediate and highest ranges)
for each habitat In Soc Trang, gut weed samples at three salinity ranges, namely 1-2 ppt, 5-6 ppt and 10-12
ppt were analyzed, these results exhibited that the wet/dry ratio decreased with increasing of salinity while
the total lipid and ash contents increased with salinity, and other components (protein, fiber and
carbohydrates) showed slighdy changes. For amino acid composition of these samples, total amino acid
collected at salinities of 1-2 ppt and 5-6 ppt were similar and both were better than the ones harvested at
salinities of 10-12 ppt For gut weed samples recorded from Bac Lieu at four salinities ranging between 1012 ppt, 15-17 ppt, 20-22 ppt and 25-27 ppt, analysis results revealed that the wet/dry ratio, total lipid and ash

contents followed the same pattern as observed for Soc Trang habitat However, the protein contents of
these samples varied in different ways, the lowest and highest protein contents were found in the 15-17 ppt
and 25-27 ppt samples, respectively, while protein values in the 10-12 ppt and 20-22 ppt samples were almost
equal; the carbohydrate levels reduced with increasing salinity. For amino acid profile, showed the identical
effects as observed for protein contents. Moreover, the protein content of gut weed was positively
correlated with nutrient level in the water bodies.
