Just as with steaks, you can make easy pan sauces to go
withroastbeefbydeglazingthejuicesleftintheroasting
pan. However, I prefer to serve mine with a cooling
horseradish cream sauce. I love the richness it adds and
the mustardy bite of the horseradish (who doesn’t like
mustard with beef?). Make it with homemade crème
frche,andit’llreallyknockyoursocksoff.
