STEP1:SEPARATETHELEGHoldthechickenbyone
ofthedrumsticksusingtongs,atowel,oryourfingerand
separatetheskinthatholdsittothebreastwiththetipofa
sharpknife,pullingitawayasyougo.
STEP2:FINDTHEJOINTFindthejointwheretheleg
meetsthehipbytwistingthebladeofyourknifebackand
fortharoundthearticulationuntilitslipsin,thenworkthe
knifetipthroughtoseparatethelegentirely.
STEP3:REPEATRemovethesecondleginthesame
manner.

STEP4:FLIPANDLOCATEFlipthebirdoverandwork
theknifetipintothejointbetweenoneofthewingsandthe
breast.Cutthewingawayandrepeatonthesecondside.
STEP5:SLICEALONGTHEBREASTBONEFlipthe
chickenoverand,usingthetipofyourknife,followthe
curveofthebreastbonetoreleaseonebreasthalffromthe


carcass,pullingitoutwardasyougoandtryingtoremove
