ABSTRACT
Staphylococcus aureus is a opportunistic pathogen and a major concern for
human health. By determining the amount of staphylococci, the growth inhibitory
effect produced by the antimicrobial activity of the Lactobacillus acidophilus strain on
the Staphylococcus aureus strain was tested on liquid media, soya milk and meat
matrix, that contained a mixture of S. aureus and L. acidophilus. The optimum ratio of
S. aureus to effector was 1/100 at 30

C. The population of S. aureus at ratios of 1/100,
1/50, 1/10 never attain 810

cell per milliliter at 30

C. Production of acid lactic
appears to inhibit growth of S. aureus in the early but not the late stages of incubation.
