I. Market research
1. Current situation of mushroom production for foods and medicines in the
world:
- At present, there are about 2,000 types of edible mushoom, of which 80 kinds
are in high quality and economic value. In addition, some types of mushrooms are
growned artificially with high output such as Agaricus bisporus; Lentinula edodes;
Pleurotus spp; Volvariella volvaceae; Auricularia spp, etc with 30-40% protein, 6070% Carbonhydrate, 2-10% fat, rich minerals and unreplaced acid amin, vitamins B,
C, D, E, and no toxin. Some mushrooms for medicines such as Ganoderma lucidum,
Poria cocos, Cordyceps sinensis, Dictyophora indusiata, Hericium erinaceus with so
many biological substances to assist to prevent and cure some disease to human
beings. At present, countries arround the world pay more and more attentions to
researching, selecting to generate new mushrooms with high value and to applying
advanced mushroom growing process to industrially produce high-class types of
mushrooms such as Pleurotus enringii, Flammulina velutipes, Hypsizigus marmoreus,
Hypsizigus marmoreus, Agrocybe aegerita, Clitocybe maxima.
2. Current situation of mushroom production in Vietnam:
- Vietnamese people has been aware of collecting natural mushrooms such as
Lentinula edodes, Auricularia spp for foods for thousand years. Ganoderma lucidum
was consider as “Rare and Valuable product of the forest and land in the South” to be
used as a precious medicine in the age of Hai Thuong Lan Ong- Le Huu Trac and Le
Quy Don. About 1,200 types of mushrooms for foods and medicines are determined in
the Mushroom system in Vietnam. Such precious types of mushrooms as Ganoderma

lucidum, Trametes Versicolor, Hericium erinaceus, Poria cocos, Cordyceps sinensis,
etc are distributed mostly in the South, Central and North of Vietnam. High-class
mushrooms and mushrooms for medicines are cultivated at present, namely Agaricus
bisporus; Volvariella volvaceae; Pleurotus florida; Lentinula edodes; Auricularia
polytrycha; Ganoderma lucidum, etc. Most of them have been researched and
cultivated popularly in the country. The regions favored with straws are suitable to
cultivate Agaricus bisporus, Volvariella volvaceae, Pleurotus florida meanwhile the
areas with plenty of sawdust and corncob are appropriate to growth Auricularia spp


and Ganoderma lucidum with tens of thousands of tons of input materials to create
thousands of tons of mushroom products for domestic demands and export.
- Total output of all types of mushrooms for foods and medicines in Vietnam
currently reaches approximately 250,000 ton/ year. The export turnover is about USD
60 million/ year. Vietnamese people have been cultivating 6 types of popular
mushrooms in localities:
+ Volvariella volvaceae is focused in the Southwest provinces of Vietnam (Dong
Thap, Soc Trang, Tra Vinh, Can Tho, etc), making up 90% of the total output of
mushroom in the country.
+ Auricularia spp is mainly found in the Southeast provinces of Vietnam (Dong Nai,
Lam Dong, Binh Phuoc, etc), making up 70% of the total Auricularia spp in the
country.
+ Agaricus bisporus; Pleurotus spp and Lentinula edodes are mainly cultivated in
the Northern provinces with the annual output of about 10,00 tons.
+ Many localities in the Southwest and Highland of Vietnam have been carried out
projects on cultivating and processing mushrooms. And as the result, the development
of mushroom industry is feasible in both engineering and economic aspects.
- However, a lot of high-class mushroom types and other common ones have not
been sufficiently researched to be put into growth and production on a large scale in
Vietnam. At present, they are put into mushroom breed group by Plant-Biotechnology

Center – Agricultural Genetics Institute of Vietnam. The Center has researched
sucessfully the technology procedures to industrially grow high-class mushrooms. At
present, the demand on acquision on technology and science to generate the products
with high value is so urgent and necessary.
3. Current situation of mushroom production in Thai Binh province:
- Thai Binh is a purely agricultural province, of which over 80% of the
population is peasants and farmers. As a province established due to marine alluvion
and rich land but unfavored natural resources to serve industrial development. In
addition, Thai Binh people are hard working. Thai Binh launched a special program in
1990s to change and to grow mushrooms in some sub-districts, communues, however,
the Project was not successful due to economic and technical conditions as well as
unsecured output market. One household has bravely invested in some commercial
mushrooms to serve the demands in the province since 2000, however, the activities
are unsytematical with uncomprehensive use of technology and equipments, therefore
the effectiveness is not as high as being expected. The mushroom cultivation brings
high economic effectiveness, therefore getting rich from the occupation is possible.


- The materials to cultivate mushrooms are plentiful such as dustsaw, straws,
baggase.
- Plant-Biotechnology Center – Agricultural Genetics Institute of Vietnam is the
transfer technology hosting agency with experiences on successfull technology
transfer of mushroom cultivation to provinces and cities in the country.
- To construct and to develop the cultivation of high-class mushroom and
mushrooms for medicines in Thai Binh, it is necessary to settle synchronously
demands of producers to contribute to promoting socio-economic development of the
locality, therefore, the implementation of the Project on “Construction of Industrial
multiplication, growing and processing of mushrooms for foods and medicines in
Thai Binh province” is so urgent.
II. OBJECTIVES

1) General objectives
 Construction of mushroom production and processing models toward
industrial direction: applying advanced, mechanized and modernized
scientific-technological research results to mushroom growth in Lam Dong
province for other centers to learn experience.
 Contribution to employment creation, development of mushroom growth
in farming sub-districts of Thai Binh province: As the agricultural area is
narrowed, creation of mushroom products is to serve domestic demands and
export. In addition, it brings socio-economic benefits to mushroom producers
and speeds up the development process of mushroom cultivation in Thai Binh
province.
 Supply of mushroom products: with high quality to domestic and foreign
markets, abusing agricultural and forestry waste to be materials to produce
mushrooms, contributing ecological environmental protection.
2) Concrete objects
 Establishing one industrial production and processing model to
mushrooms in Nam Viet Technical Trading Company Limited which is
the place specializing on industrially producing and processing
mushrooms by applying high technology and mechanization.
 Training teams of staff, experts, technicians to thorough grasp mushroom
cultivation, processing technology and consumption procedures for
foods and medicine.


 Construction of mushroom cultivation model in Nam Viet Technical
Trading Company Limited and 10 farms in other sub-districts in Thai
Binh province. Then, mutilating to other sub-districts to reach the output
of 500-600 tons of fresh mushrooms/ year.
 Construction of link among the mushroom producers, scientists and
enterprises to develop mushroom growth, processing, and consumption

in domestic market, etc.
 Organizing training classes for peasants and farmers to participate into
mushroom production and thousands turns of peasants and farmers to
joint mushroom cultivation and processing program under
decentralization model.
3) Production process decision
Based on the market research and Project’s targets, Nam Viet Technical Trading
Company Limited decides the production process to be uninterrupted.
III. Selection of production technology
Use of transferred and applied technologies
The technologies transferred by Plant-Biotechnology Centre – Agricultural
Genetics Institute of Vietnam include:
- Technology to produce some high-class mushrooms for foods and precious
medicines: The technology owns optimal multiplication factor and time. The time to
produce the mushroom types with high capacity, quality, in line with local production
conditions, low cost can be adjusted depending on production progress.

Drying in 2 periods: low temperature is used in the first period so that the
mushroom is dried gradually to reduce the water in the mushroom and keep the
original color of the mushroom at the same time, then increasing temperature to make
them dry. The two drying periods must secure original color and quality of mushroom
products.
IV. Project’s content:
1. Construction of Center for Industrial Multiplication, Growth, and Processing
of Mushroom.
-

Newly constructing, improving, and upgrading existing houses to serve for
mushroom multiplication, production and processing, including:
 Construction of material treatment houses, installation of industrial
equipments in the area of 700m2. The house architectures are
Czechoslovakian typed- warehouse with iron frame and plate as roof.
 Construction of mushroom cultivation house: 100 m2.
 Construction of the specialized house to grow mushroom industrially with

cold equipments in the area of 500 m2 (Total area of 2,000 m3 in the cold
house for grow high-class mushrooms).
 Construction of warehouses to store materials to produce, cultivate breeds,
and processing mushrooms in the area of 100m2.


 Construction of huts under the model of uninterrupted concentrated

of 5,000m2.
Properly and scientifically improving, installing power, electric system into
production chambers and areas to serve for mushroom production, growth and
process work.
Construction of yards and pits to store materials and treat waste after harvest
to be fertilizer in the area of 800- 1,000m2.
Auxiliary works such as the Office, rest-rooms, toilets, etc.
3-phase power system, water supply and drainage system.
Proper construction and arrangement of plan to secure green-cleaned and nice
environment landscape.
Total plan area of the production site is 30,000 m2.

The mushroom cultivation house equipped with cooling plant in the area of:
500m2 x 4m=2.000m3.
Cradles for growing mushrooms and mushroom bags: 100 sets.
Sterile cultivation cabinet: 2 each.
Material rollers: 1 each.
Lifter (1,5 ton): 1 each.
Mushroom breed storage cabinet 500 liter: 1 each
Air-conditioners: 18.000BTU: 4 each.
Vacuum packing machine: 2 each
Material grinder: 1 each.
Straw cutting machine: 300kg/hour: 1 each.
Industrial oven to dry mushroom: 200 kg /batch: 2 each.
Brick oven (to 10 farming models): 10 each.
Industrial oven to dry mushroom bags supplied by 10 farms: 10 each.
Generator with the capacity of 100 KVA: 1 each.
Other equipments: desks, stainless steel chairs, tanks, scales…….
Training experts, technicians, and workers to acquire technology to grow,
process and consump mushrooms.

- Training 8 qualified officers to acquire technology to grow, process and consume
mushrooms. They are able to organize the management of mushroom growth,
processing and self-accounting right after the Project ends.

- Training 6 technicians on site to practice to produce mushrooms under the
common and high-class mushrooms production and cultivation plan.
- Training 4 technicians on site to carry out preliminary process and processing
mushrooms, to apply fluently mushroom processing and production lines on large
scale.
- Training 20 workers on site to acquire mushroom growth and cultivation under
the decentralization and centralization models among local people.
- Training and instructing mushroom cultivation technique under decentralization
model to organizations and individuals directly growing mushrooms.
- Acquiring fresh mushroom cultivation, processing, maintenance technology on
large scale and mushroom waste treatment technology into biological organic fertilizer.
4. Setting up the model of applying, manufacturing kinds of edible mushroom
and pharmaceutical mushroom under industrial trend:
 Setting up the model of central production base:
+ With 5,000m2 area of tent for planting 6 common types of mushrooms under
industrial trend: Agaricus bisprus, Volvariella volvacea, Pleurotus florida,
Auricularia politricha, Ganoderma lucidum, Agrocybe. Sp with capacity of
1,000 tons of raw materials/year.
+ With 500 m2 area of industrial planting house equipped with cold devices for
planting edible mushrooms with great value such as: Flammulina velutipes,
Pleurotus eringii, Hypsizigus mamo –reus, etc.
+ Finishing technological procedures of planting mushroom on each kind of
price available and suitable to every local region..
+ Serving the task of training, visiting the mushroom production model to
popularize the production at other local regions.
 Setting up the satellite mushroom planting model with 10 bases whose capacity
of 100 tons of raw material/base/year and thousands of m 2 of plants to ultilize
the capacity of 500 tons of mushroom/year, closing the mushroom planting
cycle in 1 year.



+ Evaluating the economic effectiveness of mushroom production model
sepcifically. Since then, taking it as foundation for building up and developing
the mushroom planting belt and popularizing it to other local regions.
+ Carrying out the transfer of science – technology to the farmers directly in
order to transfer the rural agricultural economic structure.
 Expanding the planting model of mushroom types to achive 3,000 tons of
mushroom commodities/year.
5. Technology of Preliminary treatment and processing mushroom
-

Installing the equipment of manufacturing industrial mushroom bag inserted with
mushroom processing line.
- The processed mushroom products include:
+ Canned mushroom, glass bottle equivalent to 20,000 bottles (with weight of
0.5kg/bottle).
+ Volvariella volvacea, salted Agaricus bisporus: preliminary treating by salt to
can under glass bottle type or selling the preliminary treated mushroom.
+ Volvariella volvacea, Pleurotus florida, Ganoderma lucidum, Auricularia
politricha, Agrocybe. Sp in dry type.
6. Organizing the market of consuming mushroom products
- With total output of 1,500 tons of fresh mushroom/year. In which:
+ 1,300 tons of fresh mushroom are sold by farmers in the free market.
+ 50 tons of salted mushroom (equal to 100 tons of fresh mushroom) are used
for processing, canning or exporting under kind of raw material mushroom.
+ Dry mushroom: 10 tons (equal to 100 tons of fresh mushroom) sold in
domestic and export market.
+ Canned mushroom in glass bottle: 10 tons of fresh mushroom will produce
20,000 finished mushroom bottles which are used domestically and for exporting
purpose.

- The output of mushroom produced annually is 1,500 tons, will be brought to
consume at planting bases on Hanoi and neighboring regions.
- Organizing the sale market:
+ Establishing the network of consuming fresh mushroom at cities, towns,
townships, populated area, restaurants and hotels.


+ Connecting scientists – farmers – enterprises to find out the optimal market
solution for mushroom products in order to speed up the development of
mushroom industry sustainably.
+ Processed mushroom: dry mushroom is packed, canned, organized for
consumming at trade exhibitions and super markets.
+ Promoting trade for kinds of mushroom such as salted mushroom, canned
mushroom in glass bottle for the export market.
V. Solutions for implementing the project
1. Solutions for investing the infrastructure
Total space of 30,000m2 area of agricultural soil are aprpoved by the competent
authority for implementing the project in Thai Binh
- Constructing, reforming and upgrading the infrastructure for serving the mushroom
production and processing under industrial trend. Serving the project implementation
and after finising the project will be the industtrial mushroom processing and planting
base at the district in particular and in Thai Binh province in general.
- Upgrading the existed plants. Repairing, installing equipments serving the products
of mushroom bags with great quantity to supply to the model and scattered
neighboring regions.
- Constructing plants containing industrial equipments for producing the breeds –
processing mushroom with total area of 700m2.
- Constructing the centrallized mushroom planting model with 2.000m 2 of tent area
for serving the uninterrupted and industrial mushroom production.
- Constructing houses equipped with cold device for produce high-grade mushroom

with area of 500 m2
- Supporting the tent construction, bamboos for the satellite mushroom planting model
with total area of 2.000m2.
- Constructing the warehouse for containing raw materials with area of 100m 2.
- Reforming the office, training office, and transferring technology of planting
mushroom for farmers: 100m2.
- Utilities, ground traffic:
+ The 3-phase power source with the maximum electrical power of 100kw/h.


+ Ultilizing the processed water source which can be leaded to mushroom
planting and processing houses with capacity of 30m3/day.
- Ground: Concrete grounds are used for gathering raw materials to produce seeds,
plant types of mushroom with total area of 800- 1.000m2.
- Constructing the satellite mushroom planting model with total area of 2.000m 2 of
ten. This model is implemented by famers in the project implementation term.
2. Solution for training the human resource
2.1. Training key technical staff:
In producing mushroom under industrial scope, there must be key technical
staff to hold positions of team leader or be in charge of production phases such as:
steaming, sterilizing – cultivating mushroom seeds – Caring, gathering – processing
products:
Training in Hanoi.
+ Total 8 people.
+ Training time: 1 months.
+ Content:
-

Participating into a training course of technology on planting, processing
edible mushroom and pharmaceutical mushroom in 10-12 days.

Dividing the training groups and practising groups on the industrial
equipments at the Chia các nhóm đào tạo và thực hành trên thiết bị công
nghiệp tại Plant Agribiotech Center so that the learners can understand
clearly and use industrial equipment fluently. Time: 15-20 days.

These learners will be the key ones at production phase of the Company.
2.2. Training skilled workers at site:
Technologist fo the transfer authority will open a class of teaching theory and
practice at site for the whole technical staffs, workers, including the following groups:
-

Group for producing mushroom: including workers processing raw
materials from the phase of mixing raw materials – packing the mushroom
bag – steaming and sterilizing – cultivating mushroom seeds until the
phase of bringing mushroom into the mushroom fibre planting house.

Group for caring, gathering and processing mushroom.

-

Group of workers for processing mushroom residue into organic fertilizer.


-


Production groups have tasks of receiving production technology,
processing mushroom under the industrial scope.

2.3. Training the technique of planting mushroom for famers:
In the content of the project, the mushroom production plant is the place of
producing mushroom bag already included mushroom fibre and only needed to care to
yield: a part of the mushroom bag is cared and gathered at site, while remaining 50%
of mushroom bag is transfered to households for caring and gathering at home.
Therefore, households are considered as satellite of mushroom production of the
Center.
Opening classes training on technique of planting, caring, gathering mushroom
for households in the commune:
+ Number of class: 10 training classes
+ Quantity: 30 people/class.
+ Training time: 3- 5 days/class.
3. Solutions for production organization:
Manufacturing and processing edible – pharmaceutical mushroom under
industrial trend will be organized under the centralized and diversified form.
 Manufacturing, processing mushroom under industrial trend at the base of the
Company’s Center at communes with installed equipment, the annual capacity
is 1 million of mushroom bags of all kinds after the transplant, fibre grow in full
at the bottom of the mushroom bag.
- Five hundred thousands of bags are cared, gathered at the Company, the
fresh mushroom products, dry mushroom products are consumed and
processed at the Company
- The remaining of mushroom are transfered to models for caring and
gathering.
 Dispersed production at households:
-


The seed time of producing mushroom is closed during the year.
Households use straw to produce Pleurotus florida, Agaricus bisprus,
Volvariella volvacea and 50% of the mushroom bags manufactured at the
Center will be brought to households for caring and gathering; the
mushroom products after being gathered will be sold to the Company and
processed into dry mushroom (100m2 hanging tents gain 5,000 mushroom
bags/ 1 season lasting in 3 months) in which the project has 10 satellites of


planting mushroom in 2 season/year will care, plant and gather about 800
thousands tons of mushroom bags/year.
- Types of fresh mushroom products are consumed on the market or
processed into salted mushroom, dry mushroom at the Company to ensure
the equal quality.
4. Solutions for market and products consumption
Currently, the demand for consuming mushroom is increasing:
-

With high-grade mushroom types: the Plant Agribiotech Center signs the
underwritten contract.
With kinds of fresh mushroom like: Plant Agribiotech Center , Volvariella
volvacea, Pleurotus florida are mostly consumed in fresh type.

With dry mushroom products like: Auricularia politricha, the domestic
market and the annual export consume thousand tons of products every
year.
The production base of the Center is also the place where manufactures bags of
Auricularia politricha on bagasse, straw and sawdust;

+ A part of the mushroom bag is cared, gathered at site.
+ Most of the bag will be sold to the farmer to plant at their house.
Products of the Company:
1. Auricularia politricha bag: 100 thousands of bags. Unit price: 2,500 đ/bag
2. Other kinds of mushroom: Volvariella volvacea, Pleurotus florida, Agaricus
bisprus.
- Price of fresh mushroom:

10,000 đ-25,000đ/1kg.

- Salted mushroom at lowest price: 14,000 đ/1kg.
3. Dry Auricularia politricha: 60,000 đ/1kg.
4. The organic fertilizer product of the Company produces 500 tons every year.
The products are used to fertilize the crops.
The production activities of the Company with fresh products manufactured at
site and repurchasing from the farmers. There are following methods for consuming
products:
* With main dry Auricularia politricha:


Currently, the domestic and export markets are non-limited, it is able to export
thousands of tons. The domestic consumption demand is hundred of thousands tons,
with the lowest buy-in price is 60,000đ/kg of dry Auricularia politricha with unlimited
quantity.
* Dry Ganoderma lucidum product is the pharmaceutical mushroom, the annual
demand is tens of tons – the price of I-class mushroom is 350,000 đ/kg dry.(wholesale
price)
Ganoderma lucidum is distributed to pharmaceutical companies like Central
Pharmeceutical Company No.1, Hanoi Pharmaceutical Company, Central
Pharmaceutical Company No. 3,...

* Products of Agaricus bisprus, Volvariella volvacea, fresh Pleurotus florida on the
market are currently consumed very well. Each year, tens of thousand tons, with
attractive price, creating the capital turnover quickly. For the time being, the cheapest
price are: fresh Pleurotus florida : 12,000 đ/kg; fresh Volvariella volvacea, fresh
Agaricus: 20,000đ/1 kg.
The market of salted Volvariella volvacea, salted Agaricus bisprus, canned mushroom
for exporting is very greate (millions of tons/year). (The acquire price of salted
Agaricus bisprus, salted Volvariella volvacea currently is 15,000đ/1kg).
5. Solutions for source of capital:
The project is implemented by Nam Viet Trading and Technique Company
Limited having infrastructure, experience in management, having self capital source
for investing in technology and equipment to develop the mushroom planting industry
under industrial trend. Besides the capital source form the Central Budget of Science
for implementing project, the Company has its own capital and loan capital to produce
and turn over its capital to buy raw materials for production.
6. Solution for technological procedure.
Carrying out the target and application content of scientific and technical
advances into producing edible mushroom and pharmaceutical mushroom under
industrial trend, The Project needs to have solutions for new advanced technology,
mechanizing and suitable to the level of the producer and the local region where
implementing project.
Applying the domestic technology procedure transfered by Plant Agribiotech

VI. Effectiveness of the Project


Capacity of the mushroom production base under industrial trend at Nam Viet
Trading and Technique Company Limited and its satellite bases use 2,500- 3,000 tons
of straw, sawdust, bagasse every year to plant mushroom and create producst from
1,200- 1,500 tons of fresh mushroom of all kinds with value of 25-37 billion dongs.

For workers parcitipating in the production, the daily wage is: 60,000- 80,000
dong/shift.
Analyzing the economic effectiveness of planting each type of mushroom on
1000 kg of raw materials, we have:
* Auricularia politricha (Calculated for 1000kg of raw material)
- Input expenses: 2,500,000 đ
- Total output revenue of 60kg of dry auricularia politricha x 60,000 đ/kg = 3,600,000
- Direct interest: 3,600,000 đ – 2,500,000 đ = 1,100,000 đ
* Ganoderma lucidum (calculated for 1000kg of raw material)
- Input expenses: 7,500,000 đ
- Total cost of selling products: 30kg of dry mushroom x 300,000 đ/kg = 9,000,000 đ
(calculated averagely for both 1-class and 2-class mushrooms)
- Direct interest: 9,000,000 đ – 7,500,000 đ = 1,500,000 đ
* Pleurotus florida (calculated for 1000kg of raw material)
- Input expenses:

5.000.000 đ

- Tổng thu bán sản phẩm (thấp nhất ): 500 kg nấm tươi x 12.000 đ/kg = 6.000.000đ
- Direct interest: 6,000,000 đ – 5,000,000 đ = 1,000,000 đ

- Total cost of selling products. 220kg of fresh mushroom x 20,000 đ/kg = 4,400,000

1.800.000 đ

- Total cost of selling products: 130kg x 20.000 đ/kg = 2.600.000 đ
- Direct interest: 2.600.000 đ- 1.800.000 đ = 800.000 đ
* Processed mushroom product:
The mushroom product with industrial scope, besides the fresh mushroom
supplying to the daily market. The company must process them into types of dry
mushroom, salted mushroom, canned mushroom. Ensuring the standard of domestic
consumption and export.
* Processing mushroom residue into combined organic fertilizer.
The raw material of mushroom residues used to make combined organic
fertilizer are considered at a main part of the organic fertilizer production line.
