<i>Pho</i> might be Viet Nam’s most famous dish but <i>bun cha</i> is the top choice when it comes to lunchtime in the
capital.
You’ll find <i>bun cha</i> – a Ha Noi speciality at food stalls across Ha Noi. Just look for the clouds of meaty
smoke after 11 am when street-side restaurants start grilling up small round flat slides of seasoned pork over
a charcoal fire. The pork is put in a mixture of spices before they are grilled. Once they’re well-grilled and
crispy, they are served with a large bowl of a sweetish fish sauce broth, a basket of herbs and a small amount
of cold rice noodles. Dip everything in the broth and enjoy!

If you go to the central Vietnamese city of Hue, you must try <i>bun bo Hue</i>. Basically, it is also a kind of soup
with noodles, like <i>pho</i>. But it has distinctive taste and ingredients. Fish sauce and shrimp sauce are added to
the broth to bring its flavour. There are pork leg, pork meatballs, slides of beef, and lots of fresh herbs. It’s
also served with some pig blood cubes. It’s quite spicy, especially if you have it in the local taste. There are
many variations of <i>bun bo Hue</i>, but it’s better to taste it in Hue.

My favourite Vietnamese food is ‘hoa qua dam’ – a kind of dessert. Basically it’s a fruit salad mixed with
coconut milk and condensed milk. You can add any kind of fruit you like. My favourite choices are
watermelon, apple, mango, jackfruit, and longan. It’s very easy to make ‘hoa qua dam’. You just need to cut
the fruit into small pieces. Then you add coconut milk, condensed milk up to your taste. You top the mixture
with some grounded ice, stir and enjoy.
