Improves vision
There’s some truth in the old wisdom that carrots are good for your
eyes. Carrots are rich in beta-carotene, which is converted into vitamin
A in the liver. Vitamin A is transformed in the retina, to rhodopsin, a
purple pigment necessary for night vision.

Studies have shown carrots reduce the risk of lung cancer, breast
cancer and colon cancer.



Slows down aging
The high level of beta-carotene in carrots acts as an antioxidant to cell
damage done to the body through regular metabolism. It help slows
down the aging of cells.

Vitamin A and antioxidants protect the skin from sun damage.

2.How to roast Carrots
Prepare



Work with 1 pound of fresh carrots at a time.
Wash, trim, and peel or scrub, if necessary.

Bring out the natural sugars in carrots by roasting them The
caramelized flavors make the vegetables taste like a treat—even to
picky eaters.


Cut 1 pound carrots into 1-inch pieces. Arrange cut carrots or baby
carrots in a baking pan.



Toss carrots with olive oil, salt, pepper, and, if desired, other seasonings.



Cover pan with foil.



Bake in a 425°F oven for 30 minutes.




Remove foil; stir carrots.



Bake, uncovered, for 5 to 10 minutes more or until carrots are tender.

3.Carrot and Stick
The phrase "carrot and stick" is a metaphor for the use of a combination
of reward and punishment to induce a desired behavior. It is based on the
idea that a cart driver might activate a reluctant mule by dangling a carrot in
front it and smacking it on the rear with a stick. The idea sometimes appears
as a metaphor for the realist concept of 'hard power'. The carrot might be a
promise of economic aid from one nation to another, the stick might be a
threat of military action.
When the incentive is given only by displaying a (usually unattainable)
reward, this is known simply as a "dangling carrot". The idea is that the
motion of the carrot (dangling on a string) creates the illusion of attainability,
and keeps the subject chasing it.

"And" may be replaced with "or" ("the carrot or the stick)" to suggest the
choice between reward or punishment as a means to alter behavior.

4.Carrot Harvest Time


Knowing how to tell when carrots are ready to harvest is important for
getting a good crop. First, consult your seed packet to see how many
days it takes your chosen variety of carrots to mature.
Now that you know when to pick carrots, you’ll want to know the best
procedure for how to harvest carrots from the garden. Grabbing the

foliage and giving it a pull often results in a handful of foliage with no
carrot attached. It helps to loosen the soil with a garden fork before
harvesting carrots. Cut off the green tops 1/4 to 1/2 inch from the top
of the carrot and rinse and dry the roots before storage.
