SUMMARY
Nisin is a bacteriocin which has a board antibacteria spectrum and inhibiting pathogeneic bacteria in
humans and animals, such as Staphylococcus aureus, Listeria sp. In addition, althought Nisin was obtained
from fermenttion broth of Lactococcus lactis that have been widely applied in food preservation industry, but
native strains secreted naturally Nisin with low levels. Hence, the domestic and foreign researches currently
perform to increase Nisin expression level by recombinant techniques in many host cells as Escherichia coli or
Saccharomyces cerevisiae (S. cerevisiae). In order to find a new approach to applications in food preservation
as well as collect new strains inhibiting pathogeneic bacteria in cattle and aquaculture. We will show strategy
in which we aim to express Nisin on S. cerevisiae cell - surface by fusion nisin gene with a-agllutinin gene.

The yeast cell lines are collected as the raw material for applied research in preservation food as well as in the
preparations inhibiting pathogeneic microorganisms.
